Madonna has so much to cram into her shows - I am sure being good at guitar is the last thing on her mind. She just adds the guiar playing in to spice the songs/atmosphere up.

Don't forget Madonna is an unbelievably busy woman who probably doesn't even get time to play with her children, let alone learn guitar. She's an incredibly talented woman - she's much better at dancing and writing songs.
